OMG...this chicken soup is so easy and delicious! I swear it made me get over my cold too!
This recipe is kind of made up...from watching my Mom and adding my own "flair". I love to make soups...they are super easy and delicious.
OK so I really hate writing down ingredients which is why I took a photo of everything I used. I swear, the turkey stock made this soup! I am going to stock up on that for sure (I only used chicken stock before...but man oh man that turkey stock is the bomb--it gave a nice rich flavor and color)!
Alrighty...this is how I made this soup: First, I always saute my cut up carrots and celery in butter and olive oil prior to adding (about 10 mins). It cuts down the time to make the soup in half! While the veggies are cooking, I get my stock in a pot. I get the stock nice and hot. Wait that sounds like something Dr. Seuss would say...LOL. Anyway...I add the carrots and celery and let it simmer for about 10 to 15 minutes. Then I add the cut up scallions, celery leaves and chicken. I just bought some pre-cooked chicken breasts at whole foods---diced them up and threw them in (I know it's kinda lazy, but it works out fine for me). I add some salt and herbs to taste. When everything is cooked (aka...veggies not crunchy) I add the noodles. I let them soft boil for about 5 minutes. Then I turn everything off and let it sit for about 15 minutes (so all the flavors mingle and dance together). And then into my belly it goes!
How easy is that?
